Knowledge: Following the successful completion of the Programme, the learner must be able to know:
• the method for catering hotels and generally of catering units;
• how to handle the method for acquiring food, beverages, and equipment;
• how to schedule the business operations of tourism enterprises;
• how to fund tourism enterprises;
• how to keep customer accounts (Main Courante);
• how to supervise floors;
• how to supervise and manage the personnel of tourism businesses;
• how to investigate the market for the sale of tourism goods and services;
• how to manage catering businesses (restaurants, cafeterias, etc.), bars, clubs and canteens in tourism areas that fall into Luxury and A Class;.
• how to prepare income - expenses budgets;
• how to perform the above activities when these refer to hotel, catering, and other departments of passenger vessels / cruise ships;
• how to provide tourism information;
• how to issue tickets;
• how to design and compose tourism packages;
• how to plan and perform trips;
• how to schedule and perform mass transits of persons;
• how to lead tours;
• how to work as manager of hotel offices;
• how to work as manager of travel agencies;
• how to provide services to the Inspection Directorate of the Hellenic Tourism Organisation and to other administrative and leading directorates;
• how to prepare feasibility studies for the establishment - expansion of tourism businesses.
Skills - Competencies: Following the successful completion of the Programme, the learner must be able to:
• plan and manage the entire tourism business, regardless of its size, by applying scientific methods in its organisation and operation;
• participate in the design, public administration, and tourism policy at a national, regional, and local level;
• manage, train, and develop human resources of tourism businesses and organisations;
• participate in the sector producing hotel services, and specifically in the management, organization, and operation of rooms, floors, conference areas, as well as sport and leisure departments;
• participate in the promotion and sale of products to consumers, directly from the providers of tourism services and products;
• apply operational and international electronic systems for gathering, processing, and forwarding data and information related to tourism businesses and organisations;
• apply new IT and communication technologies, and specifically internet technologies in the fields of tourism industry;
• in the marketing field, create, set the price, promote (through advertising, public relations, promotion) and make available tourism services and products;
• prepare studies for the establishment, operation, and modernization of tourism businesses and organisations;
• contribute to the collective design and application of programmes for the development of various forms of tourism, as well as for the research and development of new tourism products in existing or emerging destinations;
• ensure the quality for the provision of tourism services and for the compliance of the final tourism product with the relevant standards (e.g. HACCP, ISO).
Learning outcomes: Following the successful completion of the programme, the learners shall become tourism scientists, with all necessary scientific and technological knowledge and skills required, in order to be able to adopt systematic approaches, resolve problems concerning decisions, and convert various information to useful guidelines for the development of tourism and the management of tourism businesses. In addition, they shall be able to engage professionaly with every field of their subject, as this is described in the study guide.
